&lt;span style="color:#990000;"&gt;Ludovic Bonnin&lt;/span&gt; &lt;span style="color:#990000;"&gt;&lt;strong&gt;Restaurant Le Golf du Haut-Poitou&lt;/strong&gt;&lt;/span&gt; 86130 St Cyr&lt;/div&gt;&lt;div align="center"&gt;Pour 4 personnes&lt;/div&gt;&lt;div align="center"&gt;4 pavés de sandre de 150g avec peau&lt;/div&gt;&lt;div align="center"&gt;100g de noisettes décortiquées&lt;/div&gt;&lt;div align="center"&gt;15cl de fond de veau&lt;/div&gt;&lt;div align="center"&gt;10cl d'huile de noisettes&lt;/div&gt;&lt;div align="center"&gt;25 échalottes&lt;/div&gt;&lt;div align="center"&gt;1 disque de pâte feuilletée&lt;/div&gt;&lt;div align="center"&gt;100g de sucre&lt;/div&gt;&lt;div align="center"&gt;1l de lait&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="left"&gt;Tatin d'échalottes :&lt;/div&gt;&lt;div align="left"&gt;Eplucher les echalottes et le mettres à cuire dans le lait 15 à 20 min. Egoutter puis rincer sous l'eau froide. Les poêler dans une noisette de beurre puis rajouter le sucre afin de les caraméliser, saler, poivrer.&lt;/div&gt;&lt;div align="left"&gt;Tapisser le fond de 4 petits moules à tarte en alu avec les échalottes colorées, poser 4 disques de pâte feuilletée dessus et cuire à 190°C.&lt;/div&gt;&lt;div align="left"&gt;Hacher les noisettes, faire 4 entailles sur la peau du sandre puis les paner côté chair dans les noisettes hachées.&lt;/div&gt;&lt;div align="left"&gt;Mettre à cuire côté peau en premier dans une poêle beurrée bien chaude. Après coloration, les retourner puis colorer les noisettes.&lt;/div&gt;&lt;div align="left"&gt;Débarraser sur une plaque pour finir la cuisson au four.&lt;/div&gt;&lt;div align="left"&gt;Faire bouillir le fond de veau puis incorporer l'huile de noisettes au fouet, saler, poivrer.&lt;/div&gt;&lt;div align="left"&gt;Démouler les tatins d'échalottes sur l'assiette, poser les pavés de sandre côté peau puis arroser de sauce. Botteler et ficeler soigneusement, chaque botte devant correspondre à une portion.&lt;/div&gt;&lt;div align="left"&gt;Marquer les asperges en cuisson à l'anglaise dans une grande quantité d'eau bouillante et salée(10g de gros sel par litre) 15 à 20 min.&lt;/div&gt;&lt;div align="left"&gt;Abaisser, tailler 4 rectangles de pâte feuilletée, les dorer avec le jaune d'oeuf, les quadriller(décor) et cuire 20 min à 230°C.&lt;/div&gt;&lt;div align="left"&gt;Laver et pocher les langoustines dans de l'eau bouillante fortement salée et additionnée de vinaigre, d'un peu de thym et de laurier. Laisser cuire 1 à 2 min à partir de la 2ème ébullition. Egoutter et décortiquer 12 langoustines. En garder 4 pour la décoration.&lt;/div&gt;&lt;div align="left"&gt;Emulsion au beurre d'Echiré : dans une sauteuse réunir l'eau et le jus de citron, porter à ébullition. Arrêter la réduction dès qu'il n'en reste que la moitié. Réduire le feu au minimum et incorporer progressivement le beurre ramolli découpé en petites parcelles. Tout en fouettant énergiquement, ajouter l'assaisonnement.&lt;/div&gt;&lt;div align="left"&gt;Garnir une assiette tiède de sauce au beurre d'Echiré et de 3 langoustines, dresser les asperges dans le feuilleté ouvert en deux dans le sens de l'épaisseur en faissant dépasser les pointes. Vienne&lt;/span&gt;&lt;/strong&gt;, se sont lancés dans une drôle d'aventure. Ils se sont en effet tous déshabillés pour l'édition d'un calendrier 2006 au profit de l'association "&lt;span style="color:#990000;"&gt;&lt;strong&gt;Un hopital pour les enfants&lt;/strong&gt;&lt;/span&gt;", à laquelle ils ont pû offrir la somme de &lt;span style="color:#990000;"&gt;&lt;strong&gt;32 000 euros&lt;/strong&gt;&lt;/span&gt;. Trier la ciboulette et émincer finement.&lt;/div&gt;&lt;div align="left"&gt;Préparer les champignons : éviter de les laver, il est préférable de bien les essuyer avec du papier absorbant légèrement humide. Les déchirer dans le sens de la longueur de la fibre, s'ils sont trop gros, sinon les laisser entiers.&lt;/div&gt;&lt;div align="left"&gt;Mettre une poêle en plein feu avec l'huile d'olive et le beurre; une fois le beurre noisette fondu, y déposer les queues de langoustines, bien les faire sauter 2 à 3 min afin de bien les raidir; rajouter les champignons et l'échalion puis refaire sauter le tout 2 min, assaisonner en sel fin et poivre du moulin.&lt;/div&gt;&lt;div align="left"&gt;Mouiller avec la crème fleurette, monter le tout à ébullition; égoutter dans une passoire en récupérant la crème de cuisson dans une casserole. Faire réduire celle-ci d'un tiers, passer au bol mixer afin de bien émulsionner la sauce.&lt;/div&gt;&lt;div align="left"&gt;Remettre la sauce crème dans une casserole avec les langoustines, remonter à température, adjoindre la ciboulette puis rectifier l'assaisonnement et dresser en assiettes creuses.&lt;/div&gt;&lt;div align="center"&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div type='text'>Lundi c'est la Foire !</title><content type='html'>&lt;strong&gt;La Foire de Lencloître &lt;/strong&gt;est née au début du XVIIe siècle quand les moniales ont donné l’autorisation aux habitants, de faire quatre foires par an, contre perception d’une taxe sur les produits vendus. &lt;br /&gt;&lt;br /&gt;Depuis, tous les premiers lundis du mois, Lencloître connaît une vive animation car elle rassemble actuellement environ 350 commerçants non sédentaires (volaille, anguille grillée etc...)et attire donc plusieurs milliers de visiteurs . &lt;br /&gt;Je vous conseille un petit détour vers cette foire totalement typique ! /&gt;300 g de sucre&lt;br /&gt;180 g de chocolat noir&lt;br /&gt;235 g de beurre&lt;br /&gt;100 g de farine&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;faire fondre le chocolat et le beurre au bain marie&lt;br /&gt;pendant ce temps, monter les oeufs et le sucre au batteur bien mousseux&lt;br /&gt;mélanger les 2 masses ensemble puis rajouter la farine tamisé délicatement&lt;br /&gt;&lt;br /&gt;laisser type='text'>Article du Fooding</title><content type='html'>Dans &lt;strong&gt;Le fooding d'Alexandre Cammas&lt;/strong&gt;&lt;br /&gt;A un angle de la grande place du Champ de foire, ou se tient, une fois par mois et depuis six siècles, un marché à la volaille, niche un bon restaurant, à la très bonne et très exigente cuisine (la carte change chaque semaine, le pain est fait maison). Et à la jolie clientèle mi-locale, mi-internationale-des Anglais, des Néerlandais, d'ou sans doute cet Yquem à 1920€, mais aussi un bon gamay à 15€, et, surtout, une compotée d'agneau de sept heures, sa salade aux herbes(ciboulette, persil, cerfeuil..), des glaces au fromage blanc, au nougat... et des sorbets qui font la guerre au sucre mais flattent le palais. MARGIN: 0px 10px 10px 0px; CURSOR: hand" alt="" src="http://photos1.blogger.com/blogger/321/2977/320/Edito01.jpg" border="0" /&gt;&lt;/a&gt;Aujourd'hui : &lt;strong&gt;&lt;span style="color:#ff6600;"&gt;Le cannelé&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="color:#000000;"&gt;Il est né, il y a bien longtemps dans le Couvent des religieuses de l'Annonciade de Bordeaux.
